help you fix your problem It looks like you are trying to find the TextBox in the GridView itself. Not the row that the button and the textbox are in. You can use the NamingContainer of the sender to find the TextBox.
code :
protected void btnEditQuantity_Click(object sender, EventArgs e)
{
    //cast the sender back to a button
    Button cb = sender as Button;

    //get the current gridviewrow from the button namingcontainer
    GridViewRow row = cb.NamingContainer as GridViewRow;

    //use findcontrol to locate the textbox in that row
    TextBox tb = row.FindControl("tbQuantityEdit") as TextBox;

    //do something with the textbox
    tb.Text = "TextBox found!";
}

it should still fix some issue You have to persists your data between postbacks, you have many options here: by Session, ViewState, Cache and some other.

    {
         dt = Session["data_table"] as DataTable;
    }
}

protected void btnTextDisplay_Click(object sender, EventArgs e)
{
     if (dt == null)

This might help you I have grid view in which I want to update row but it is not happening. The datasource is a DataTable. Please help. , Alter your code a bit and check. Change EditIndex to e.RowIndex

This might help you Since your label is inside your GridView, you have to go through the rows within the GridView. You can use GridView's RowDataBound event go through the rows and access the value of inner control. Something like this..
